Cabardès is the meeting point of two distinct climates: the cool atlantic from the west, and warm mediterrenean from the east. Our wines are a unique blend of grapes combining both climates; the atlantic cabernet-sauvignon, and the mediterranean syrah and grenache. For this reason, our grapes, grown at an altitude of 300 meters on the clay and chalk southern slopes of the «Montagne Noire» (Black Mountain) produce a unique wine that you will not find in any other region of France.
The grapes are picked by hand between the 1st and 25th September
The stalks are removed and the grapes are put into a vat for a short pre-fermentation. They are then pressed and the alcoholic fermentation takes place slowly in a stainless steel vat, or oak casks, between 16 and 23°C (60-73°F). Left for several months, the malo-lactic fermentation is then blocked to preserve the freshness of the aromas. The two different wines produced (in vats and oak casks) are bottled separately.
The wine in vats has a fairly intense aroma, dominated by lemon balm, grapefruit and apricots. From the oak casks, tha aromas are less intense, but finer and more complex, with subtle hints of wood. The two wines are different, but both equally interesting.
Can be drunk straight after bottling, but may also be kept for several years
Serve between 10 and 12°C (50-53°F); with fish dishes for the oak cask wine, and the other as a delightful aperitif.
