climate, region

Cabardès is the meeting point of two distinct climates: the cool atlantic from the west, and warm mediterrenean from the east. Our wines are a unique blend of grapes combining both climates; the atlantic cabernet-sauvignon, and the mediterranean syrah and grenache. For this reason, our grapes, grown at an altitude of 300 meters on the clay and chalk southern slopes of the «Montagne Noire» (Black Mountain) produce a unique wine that you will not find in any other region of France.

the grape picking

The grapes are picked by hand between the 1st and 25th October.

the wine-making

The stalks having been removed, the grapes are left for a short while in the press. Being very ripe, with a slow pressing, colour forms very quickly in the juice. The alcoholic fermentation occurs slowly in a stainless steel vat, at a temperature between 16 and 23°C (60-73°F). The malo-lactic fermentation is blocked to preserve the freshness of the aromas. After a winter in the vat, the wine is bottled the next spring.

the tasting

A garnet pink colour, with reflections of orange, this wine is surprisingly intense in aromas. Being very concentrated, like all the wines of Cabrol, this rosé is very different to the light rosés now in fashion. Perfume of strawberries, completed by a well- balanced flavour between smoothness and acidity.

the keeping

As with all rosés, should be drunk the same year as bottling, though experience has shown us that nothing is lost by waiting another year.

service

Drink between 10 and 12°C (50-53°F) with barbecues, picnics and salads, perfect for those long summer evenings.
