Cabardès is the meeting point of two distinct climates: the cool atlantic from the west, and warm mediterrenean from the east. Our wines are a unique blend of grapes combining both climates; the atlantic cabernet-sauvignon, and the mediterranean syrah and grenache. For this reason, our grapes, grown at an altitude of 300 meters on the clay and chalk southern slopes of the «Montagne Noire» (Black Mountain) produce a unique wine that you will not find in any other region of France.

the grape picking

All our grapes are picked by hand between the 1st and 25th October.

the wine-making

The grapes come from vines aged between 10 and 15 years. After removing the stalks, the grapes are put into vats for about three weeks. During this time, the juices are extracted and re-pumped back into the cuve to "work" the grapes. Once the alcoholic and malo-lactic fermentation are finished, the wine is finally extracted end put in another vat. The blending of different "cépages" (types of grape) starts about 10 months after the harvest. Several months more of resting are required before the wine is at last bottled at our domaine, passing first through a light filter.

the tasting

This very concentrated wine, deeply coloured, with light reflections of amber, has intense aromas of cocoa, honey and spices. Followed by blackcurrant and truffles, the flavour of smooth tannin and grilled peppers.

the keeping

Cabernet-sauvignon being the principal grape in this wine, it deserves to be kept 4 or 5 years before drinking, but can be kept much longer.

service

Drink at the temperature of 18°C (64°F), open at least one hour before serving, decanting is preferable. Can be served with most traditional french dishes, especially good with red meat and game.
